Cauliflower Fried “Rice” | Ketogenic Recipe

Cauliflower Fried “Rice” is especially for those on a low carb diet eg Ketogenic diet. Even if you are not on a low carb diet, this Cauliflower Fried “Rice” is so yummy! You can have it as a meal on its own because it’s quite filling. I serve it as a side dish when I don’t want to serve Nigerian Salad. It tastes so good.

Here are the ingredients you will need:
-1 chicken breast
-5 florets cauliflower (2½ cups “riced” cauliflower)
-1 onion (chopped)
-Red bell pepper (chopped)
-Green bell pepper (chopped)
-Yellow bell pepper (chopped)
-5 button mushrooms (chopped)
-Salt (to taste)
-½ teaspoon black pepper
-½ teaspoon thyme
-½ teaspoon cumin
-1 teaspoon oregano
-4 cloves garlic
-Carrot Oil (for frying)
