CHICKEN AND EGGPLANT CURRY ( AUBERGINE)

1 full chicken cut 1.5 to 2 pounds

Marinade :
1 Tbls fresh ginger & garlic paste
1 tsp ground pepper
1 tsp red chili powder
1 tsp coriander powder
1 tsp cumin powder
Salt to taste
1 lemon /lime
2-3 Tbl olive oil

For the sauce:
1 large egg plant / 3 small ones
3 medium size tomatoes
1 Medium size onion
2 Tbl tomato paste

¼ Cup oil ( to fry the chicken)
1 Tbls fresh ginger & garlic paste
1/2 tsp ground pepper
1/2 tsp red chili powder
1/2 tsp coriander powder
1/2 tsp cumin powder
Salt to taste
1 lemon /lime
Cilantro for garnish
