CHICKEN TIKKA BIRIANI – IN ENGLISH

Serves 4-6

Ingredients:

1st marination
2 Pound Chicken ( 900 gms to 1 KG)
1 Tbl fresh ginger and garlic paste
½ tsp Kashmiri red chili powder
1 Tbl lemon/lime juice

2nd Marination
1 cup plain yogurt
1 Tbl fresh ginger & garlic paste
1 tsp Kashmiri red chili powder
½ tsp turmeric powder
1 tsp garam masala
½ tsp coriander powder
1 ½ Tbl Mustard Oil or (any vegetable oil)
Salt to taste

For the rice
3 Cups Rice
1 tsp cumin seeds
2 bay leaves
5 cloves
1 cinnamon stick
5-10 Black pepper corns
4-6 whole cardamoms
Few strands saffron (Optional)
Salt to taste

1 ½ Tbl rose water (Optional)

For the Biriani Sauce
3 Tbl any cooking oil
1 cup diced onion ( 1 large onion)
1/2 tsp Kashmiri Red chili powder
½ tsp turmeric powder
1 tsp garam masala
½ tsp coriander powder
1 Tbl fresh ginger & garlic paste
1 cup diced tomato (3 medium tomatoes)
2 Tbl Plain yogurt
Salt to taste
Green chilies (Optional)

For Garnish
Fried onions
Chopped cilantro
