COCONUT FISH BIRIANI ( BENGALI INSPIRED )

For the rice
2 ½ cup Long grain basmati rice
4-6 whole cardamom (green)
1 black cardamom (Optional)
1 cinnamon stick
1 Bay leaf
3 cloves
1 star anise
1 tsp whole cumin seeds
Few strands saffron
2 Tbl rose water
1 Green Chilli
1 tspn oil
Salt to taste

For the fish marinate
2 lb/1 kgs fish
1 Tbl fresh ginger garlic paste
2 tsp biriani masala or garam masala
1 tsp cumin powder
1 tsp red chili powder
¼ tsp turmeric powder
1 tsp salt
2 Tbl lime or lemon juice

Sauce
3 medium size onions
1 small bunch mint leaves (1/2 cups chopped)
1 medium size coriander leaves (3/4 cup chopped)
2 tsp biriani masala/garam masala
1 tsp coriander powder
1 tsp red chilli powder
1 ½ Tbl fresh ginger garlic paste
1 ½ tsp salt
2-3 green chilies for flavors and aromas
1 cup coconut milk
I FORGOT TO ADD DRY LIME , IT ADDS A UNIQUE FLAVOUR TO THE DISH
