After the steamed lamb head, here is the tagine of testicles! yes,this is not a joke but a delicacy in Moroccan cuisine. On Morocco, they call them “fillat” (beans) or “bzizlat” (breasts), but never with their real name (because oh my god, it is to shocking!!). So you may eat them without really knowing what you are eating!
I shot this video last week, and since Eid was coming up soon, there were no more lamb testicles in the market. I made it with beef testicles instead, but it says the same recipe.
In Morocco, they also prepare them frilled or sauteed with onion and parsley. May favorite version is this caramelized onion tagine.
2 beef testicles or 4 lamb testicles
1 medium onion, cut into small cubes
3 large onions, thinly sliced
1 garlic clove, grated
2 tablespoons vegetable oil
1 tablespoon olive oil
1/2 teaspoon ground turmeric
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon coriander powder
A pinch of saffron threads
1/2 teaspoon pepper
Pinch of salt
40 ml water
100 grams raisins
1 tablespoon honey
1- Thoroughly clean the lamb testicles. Cut the testicles in half lengthwise then gently peel the outer skin
2- Heat the vegetable oil In a pot, over medium low heat. Add the onion cubes, garlic, and pinch of salt. Stir for 4 minutes then add olive oil.
3- Add the testicles and cook for 2 minutes on each side. Handle gently so they dont break.
4- Add the spices: turmeric, ginger, cinamon, coriander, safron thread, and pepper. Gently stir. Let cook for 5 minutes and flip the testicles from time to time so that all sides are cooked.
5- Add the water, cover the pot, and bring to a boil.
6- Once the liquid in the pan starts bubling, add the finely sliced onions. Place the testicles on top of the finely chopped onions.
7- Add honey, cover the pot, and cook for 10 minutes.
8- Drain the raisins from the water and add them to the pot. Add the honey and a pinch of cinamon. Gently stir, cover, and cook for 30-45 minutes until the onions carmelized. While cooking, flip the testicles from time to time, so that all sides are cooked evenly.
9- Plate in a serving dish and decorate with toasted sesame seeds.
