Poached Chicken Salad Sandwiches can be the most amazing meal ever if done correctly. In this video Jikoni Magic demonstrates how to make the perfect poached chicken breast that’s full of flavour from a mixture of herbs and spices by first browning it on the pan before poaching it.

INGREDIENTS:

1 Boneless Skinless chicken breast
15g butter
1 Tbls Vegetable oil of your choice
3 spring onions
3 cloves garlic
1 bayleaf
2″ ginger root

WHOLE SPICES:

1st set for flavouring the chicken breast:
3 Cardamom pods
A pinch of whole black peppercorns
1/4 tsp cumin seeds
1/4 tsp fennel seed

2nd set for rubbing on chicken breast:
2 cardamom pods
Pinch of black peppercorns
1/4 tsp fennel seeds
1/4 tsp cumin seeds

Few lettuce leaves
Bunch of dhania leaves
1 medium sized tomato
1/2 red bell pepper
1/2 yellow bell pepper
1 ripe avocado
1/4 red onion
7 chipolatas (brand of sausages in Kenya) Use your favourite sausages
FOR THE SALAD DRESSING:
4 Tbls unflavoured yogurt
Pinch of freshly cracked black pepper
1 Tbls vegetable oil of your choice

Salt to taste
