CALF LIVER MISHKAKI WITH SPICY TAMARIND SAUCE ( SWAHILI BBQ)

Ingredients

700 gms calf liver ( or any other liver)
Lamb fat ( optional)

Marinade ( roast/toast)
1 Tbsp whole cumin
1 Tbsp whole pepper corn

3 cloves of garlic
1 thumb size ginger
Mint leaves ( optional)
1 Lemon/lime
1 Tbsp olive oil
Salt to taste
1 Tbsp ( cumin + pepper corn)

Tamarind sauce

50 – 70 grams of tamarind soaked in 1 cup of warm water

½ cup of tamarind sauce
2-3 cloves of garlic
Small piece of ginger
½ tsp pepper corn + cumin ( coarse)
Salt to taste
1 large tomato ( blanched)
½ tsp sugar
½ tsp lemon/lime
1 or more red or green pepper
