The Nigerian Snack I Spent All My Money on in School | All Nigerian Recipes

Who grew up in Nigeria, especially Eastern Nigeria and did not eat Agidi Jollof in secondary (high) school?
This was our go to school snack in secondary school, washed down with a bottle of chilled coke or fanta. Chai o!

– 3 cups dry white corn gave me 7 wraps of Agidi Jollof
– 12 small chewable soft bones (I used ribs)
– 1-2 teaspoons Nigerian curry powder
– Salt (to taste)
– 1-2 teaspoons ground dry cayenne pepper
– 1 teaspoon thyme
– 1 red onion
– 2 small seasoning cubes (beef flavour)
– 500 mls tomato stew:

For wrapping the Agidi Jollof you need:
– Uma leaves (thaumatococuus daniellii) or
– Banana leaves: or
– Glass bowls
